The whole production cycle is managed by plcs that constantly monitor all the processing phases, in order to avoid possible human errors.
BUYING THE “ RAW”
The first step to obtain an high quality coffee is choosing the high quality raw material; we bought coffee from selected suppliers who ensure stock constancy in the course of time; all the coffees used by CAFFE’ VERONESI are bought based on samples, tested by competent authorities and then by worldwide accredited independent laboratories that analysed the coffee chemical/ physical and organoleptic features.
The samples are sent to our lab, where the coffee is subjected to close scrutiny, as chemical and sensorial analysis by the Brazilian cup test and espresso: only the coffees that met the CAFFE’ VERONESI high rigorous qualitative standard are the bought.
The CAFFE’ VERONESI makes use of a discontinuous cycle drum roaster machine supervised by a computer that follows the roasting curves (worked out) planned the roaster master; the roasting time ranges from 8 (eight) to 21 (twenty-one) minutes, according to the coffee processing; the strictly air cooling; during the roasting process a coffee bean bases about the 20% of its own weight and if water is nebulized during the cooling, the coffee gets back part of its own weight absorbing water, in so determining an economical advantage but very serious disadvantage from the qualitative point of view.
As the traditional technique requires, the roasting takes place for each different quality of coffee to enhance their perfect roasting.
Each roast process is tested by laboratory device that examines the roasted coffee beans colour to warrant an equal coffee in the course of time.
The CAFFE’ VERONESI blends are the outcome of constant pursuits to create perfect blends for different utilization.
The Company makes use of 7 (seven) computerized packaging lines:
1 kg coffee beans packaging including unidirectional secure aroma valve; this valve doesn’t let the air into the package, so far avoiding the oxidation process that would seriously damage the quality of coffee beans.
